Crockpot Caldo de Pollo

Ingredients:
- 1 lb chicken breasts (raw)
- 5 cups chicken stock
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 jalapeno, seeded and diced
- 2 cups of cooked black beans or a 15 oz can (drained and rinsed if from can)
- 2 cups of fresh or frozen corn or a 15 oz can (drained and rinsed if from can)
- 1 small can green chiles
- 15 oz can diced tomatoes + liquid
- 4-5 cloves of garlic, chopped
- ¼ teaspoon chili powder
- *Salt and pepper to taste
Directions
Combine all ingredients in crockpot and cook for 8 hours on low or 4 hours on high
Remove chicken breasts, shred, season with salt and pepper and return to crock pot
- Serve topped with diced avocado, chopped green onions, and chopped cilantro
