Crockpot Caldo de Pollo

Ingredients:

  • 1 lb chicken breasts (raw)
  • 5 cups chicken stock
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 jalapeno, seeded and diced
  • 2 cups of cooked black beans or a 15 oz can (drained and rinsed if from can)
  • 2 cups of fresh or frozen corn or a 15 oz can (drained and rinsed if from can)
  • 1 small can green chiles
  • 15 oz can diced tomatoes + liquid
  • 4-5 cloves of garlic, chopped
  • ¼ teaspoon chili powder
  • *Salt and pepper to taste

 

Directions

  1. Combine all ingredients in crockpot and cook for 8 hours on low or 4 hours on high

  2. Remove chicken breasts, shred, season with salt and pepper and return to crock pot

  3. Serve topped with diced avocado, chopped green onions, and chopped cilantro
